I don`t use enhancers for anything, natural is best.
My fish cakes: Tin of salmon roughly crumbled and strained, 3 or 4 potatoes mashed, 1 or 2 eggs beaten, onion chopped small, red capsicum 1/4 cup chopped finely.
Make patties roll in flour and cook in hot oil in pan turning once. Careful not to burn. Oh salt and pepper I prfer sea salt and fresh ground black pepper.
If you have to use anything, use salt and pepper. Good enough for most of us for centuries. Plus they don't give most people a headache, I get them from MSG.
My flavour enhancer in fish cakes is some tomato paste.
