I don`t use enhancers for anything, natural is best.
My fish cakes: Tin of salmon roughly crumbled and strained, 3 or 4 potatoes mashed, 1 or 2 eggs beaten, onion chopped small, red capsicum 1/4 cup chopped finely.
Make patties roll in flour and cook in hot oil in pan turning once. Careful not to burn. Oh salt and pepper I prfer sea salt and fresh ground black pepper.

My flavour enhancer in fish cakes is some tomato paste.

Yuk! red sauce on fish cakes? yuk.

OK OK each to thier own,just answering Kans question,he/she might like the tomato paste idea.
