These pretty biscuits are light and fruity for a special Easter treat, great to make with the children and ideal for wrapping up for gifts.
Ingredients
- 100g (4oz) caster sugar
- 100g (4oz) butter
- 1 egg, separated
- 225g (8oz) plain flour
- ½ tsp Schwartz Ginger Ground
- ½ tsp Schwartz Cinnamon Ground
- 50g (2oz) currants
- 25g (1oz) candied peel
- 3 tbs milk
- 450g (1lb) royal icing sugar (optional)
Method
STEP 1Pre-heat the oven to 170°C, 325°F, Gas Mark 3.
STEP 2Cream the sugar and butter until light and fluffy. Beat in the egg yolk.
STEP 3Sieve the flour and fold into the mixture with the Ginger, Cinnamon, currants and candied peel. Add just enough milk to make a stiff dough.
STEP 4Roll out the dough and cut out the biscuits using Easter themed cutters. Place on a greased or non-stick baking sheet and bake for 15 minutes.
STEP 5Remove the biscuits from the oven and brush with the egg white. Sprinkle with sugar and bake for a further 5-10 minutes.
STEP 6The biscuits can be iced and decorated using icing prepared from royal icing sugar and food colouring.
