    How can I make a parmesan cheese sauce without the cheese becoming clumpy

    ROMOS I like to finish
    Starting with the cream cheese is the best way to get the texture smooth. I like to finish the sauce with either 1/4 cup romano or assiago for a stronger earthy flavor.

    Sounds good enough to eat.

    Stir in a spoonfull of French mustard, it acts as an emulsifier.

    English works too, Dijon is a bit weak for me.

    I thought you would use Scottish mustard.

    Stiring , stiring , stiring, just keep stiring.

    Use very well aged parmesan.

    use a wire whisk to stirr, use low to med heat.Lots of stirring.
