    why are potato croquettes so called

    croquette is a small fried food roll containing, main ingredients such as mashed potatoes.  The croquette comes from the French croquer, "to crunch".  So because of the frying process, it makes the out side of the food crunchy. 

    It is because they are first : fryed and secondly the rolled shape.
