Obviously "afternoon" begins after noon.....12:00:01 (actually noon begins afternoon). I would think evening could start when the temperature drops one degree, or maybe at 5:00 P.M......6:00 P.M. during daylight savings time.
Evening may have something to do with shadows getting a little longer because of the position of the sun as the earth is rotating to the east.
