You might could bring suit against the company if you could prove that the company knows about your supervisors language and therefore created a hostile work environment. As for the unemployment, go ahead and sign up, if you are disputed, you will have a hearing with the unemployment office and the employer so you will be able to get your story out at least. Seek legal advice about the abusive behavior from the supervisor

There are other issues here a hostile work environment is not allowed,nor is abuse . It migh be tough to prove. I am just guessing but its unlikely you get to collect unemployment if you quit. make a complaint with the labor board and request a hearing in writeing,and do this right away ,dont wait.
