The only suggestion I can make is to use a car enamel as it does not "yellow". Acrylic is available in gloss white but it is not as high a gloss as automotive paint. What ever you do don`t use white oil based as it will "yellow" in 12 months and be a creamy shade. One thing to keep in mind is gloss shows any imperfections in the wall suface whilst a flat or low sheen disguises these blemishes. I would rethink gloss white on walls but it is your house.
