Because Nitrogen is an inert gas and permits that some special reactions be carried on without any inteference.
For example, when dealing with some organic compounds, they react almost easily with humidity. And so the chemist must prevent the 'dryness' of the system.
In other cases, Nitrogen permits frosting many biological experiences...
