There is no certain reason to the bitter-metallic taste left in your mouth for 2-3 days after eating pine nuts.
The British food authority examined the specific pine nuts in toxins center in Brussels and no explanation was found. They also rejected the presence of toxins, heavy metals or allergy, and no chemical difference was detected.
However, maybe there is a solution. The Danish food office found out that the aftertastes develop after eating 2 Chinese breeds of pine nuts, that are smaller and more round shaped than the breeds that come from Europe and America. As a consequence of this discovery their importation from China to Europe was banned.
