    What is eggs canterbury?

    I just had such a dish this morning and cannot find a recipe or history for it. A poached egg on top of tomato on top of jack cheese on top of ham and turkey on top of an English muffin; topped with a hollandaise sauce . Absolutely delicious!

      Sounds like a version of Eggs Benedict, which doesn't have tomato.

      Could be a new invention of some chef.
