I want to let my garden soil rest this summer through the winter for next year planting. What seeds may I sow to let the soil rest?

Anything that will give the soil back it's nitrogen. Green fertilizers are: legumes (beans and peas) vetch, clover, alfalfa.
Of these, vetch is the best and then clover. In the fall you can sow winter rye. All of which would be tilled under next spring before you plant.
