In Gmail you can sign off from the chat to deactivate the feature, though it will also stay to the left. If you're logged in, click the downward facing arrowhead and select 'sign out of chat'. Then minimize the chat box. If you want to be able to chat but remove certain contacts from the list, manually go to each contact and select 'never show' or 'block'.
Your chat contacts are also saved in your Contacts folder (under the Gmail logo on the left, see the Contacts list. You can remove the contacts completely from there).
