    To make sure the ribs are completely cooked. Boiling the ribs also makes the meat tender. If you just put the ribs on the grill, the bone cooks too fast, and the meat gets tough. Also, wait until the very last couple of minutes to baste the ribs with sauce or the sauce will caramelize, meaning it gets really crusty and sugary.
    To make sure it was cooked thoroughly so no one gets sick - or to tenderize it a bit as cooking over extremely hot heat as in BBQ will tend to toughen up meat.
