What Exactly is Inside a Cream Charger?

A cream charger contains food-grade Nitrous Oxide (N₂O) gas under high pressure. It's important to understand that this is not the same as the oxygen we breathe or the carbon dioxide (CO₂) in soda siphons. Nitrous oxide is an inert gas, meaning it doesn't react with the cream or other ingredients to alter their taste. Its primary function is to dissolve into the fatty liquids under pressure. When the pressure is released (as you dispense the cream), the gas expands rapidly, creating thousands of tiny bubbles that aerate the liquid into a foam. The charger itself is made of sturdy, recyclable steel to safely contain the high pressure.
