A cream charger contains food-grade Nitrous Oxide (N₂O) gas under high pressure. It's important to understand that this is not the same as the oxygen we breathe or the carbon dioxide (CO₂) in soda siphons. Nitrous oxide is an inert gas, meaning it doesn't react with the cream or other ingredients to alter their taste. Its primary function is to dissolve into the fatty liquids under pressure.
