Sesame Chicken

1/2 cup apricot jam

1/4 cup ketchup

2 Tbsp soy sauce

1 Tbsp grated ginger

1/4 tsp crushed red pepper flakes

2 lbs. boneless, skinless chicken thighs

1 medium onion chopped

2 cloves garlic, chopped

1 red pepper, sliced

scallions and sesame seeds, for serving

Rice

In a 5 to 6 at. slow cooker, combine jam, ketchup, soy sauce, ginger, and crushed red pepper. Add chicken, onion and garlic and toss to coat. Scatter the red pepper and cook for 5 1/2 to 6 1/2 on low or 3 1/2 to 4 1/2 on high. Meanwhile make rice twenty mins. before chicken is ready. Sprinkle scallions and sesame seeds on top to serve. Serves 4

Now you’ve got me hungry for stew. I have a three tiered crockpot and no excuses for not using it. You’re right, winter is coming, the days are shorter, fall is in the air and we need STEW!

My friend uses Dr. Pepper and ribs in the crock pot, with spices, herbs, catsup...very tasty.

I've a couple of books devoted to crock pot recipes. Roasts and veges are my usual. Soup is next
