I was taught if more cows are standing it's a good day to fish. If more cows are lying down it's a bad day to fish.

Here is an actual reason, backed by research:

researchers have discovered that cows stand up for longer periods when it is hot — proving there is a definite link between their behaviour and the weather — because it also suggests they lie down when it is colder, which is often what happens to the weather just before it rains.

They lay down to get some peace from the kids,chew their cud & meditate for a while.

If you weighed 1400 pounds , you would lay down a lot too !!! But, its to chew and redigest what they ate.

Cows will graze and then retreat to lie and ruminate, chewing cud for several hours.  They usually lie up on their brisket, not down on their side.  Also, usually lying with their front end elevated, to assist in rumination.  They chew cud and belch, over and over.  I however do not chew cud, just release gas!
