    Will it damage the car?

A car thermostat is an important part of its engine, because it helps to regulate the flow of coolant and keep your engine operating at a safe temperature.

Yes it does that, and diverts hot water into the heater core, without one, no heat.  This is secondary of course to the engine overheating and blowing up, of course.
