    How do I add sour and piquant flavour to dishes?

    I am trying to reproduce this fabulous hot sharp sourish tangy  flavour I once tasted but cannot remember where... An Iranian/Persian restaurant? Far eastern?  Any help gratefully recieved as there are some aubergines and okra that I think will benefit from such a treatment!

    I don't know the dish but lemon zest seemed like it would work......
