If there are no officers on the take, the money and assets are stashed in police custody until the end of all court sessions. If the person is not guilty, it is returned. If they are found guilty, the money goes towards new police vehicles, drug awareness programs for schools, and other community things along those lines. Assets are sold at auction to the highest bidder (see: bidforassets.com) and the money is distrubuted toward additional programs, such as cameras at redlights and the like.

This is an ongoing question I have had for years. My best friend is a county Sherriff. (elected) I asked him this once. his answer was that it goes into the state or county reserve for equiment, from helicopters to binoculars. Much goes into drug rehibilation -- This was the answer i got.
Now property is something else, this stuff is gone over and the best of the stuff is picked over by judges, laywers and other LEOs-- I was even told to go to the wharehouse where all confiscated goods were kept and I could have anything I wanted except guns and cars. i didn't go but now i kick myself.
cars, houses and other items of high cost such as jewlery and art is auctioned off and then the money put in the reserve fund. Guns are destroyed--except for the best ones that the judges and lawyers keep.
