What is the chemical reaction by which carbohydrates change into hydrocarbons?

It is believed that crude oil - hydrocarbon mix - is from wood or plant materials - carbohydrates.  How this happens?

Chemical energy is the potential of a chemical substance to undergo a transformation through a chemical reaction or, to transform other chemical substances. Breaking or making of chemical bonds involves energy, which may be either absorbed or evolved from a chemical system. Energy that can be released (or absorbed) because of a reaction between a set of chemical substances is equal to the difference between the energy content of the products and the reactants.

Petroleum (L. petroleum, from Greek: petra (rock) + Latin: oleum (oil)[1][2]) or crude oil is a naturally occurring flammable liquid consisting of a complex mixture of hydrocarbons of various molecular weights and other liquid organic compounds, that are found in geologic formations beneath the Earth's surface. A fossil fuel, it is formed when large quantities of dead organisms, usually zooplankton and algae, are buried underneath sedimentary rock and undergo intense heat and pressure.
