I have only kept albino channel catfish in an aquarium setting which are an albino version of a regular channel catfish.

Channel catfish are fished and farmed for food.  It is a genetic anomoly that causes the fish to lack pigmentation.  Albino channel catfish have all the same qualities for cooking and eating as a regular channel catfish.
