I think it was just happened upon...someone crushed apples and separated the juice...and the juice got a bit old and turned into cider..and the cider got a bit old and the person got tipsy.

Apple cider can also be not fermented! There used to be a mill around here where you could watch them make cider and have it fresh! Then pasteurizing arrived because people are afraid of germs. Too expensive for that owner.
