    The customer is the one who is purchasing the product!Given the current downslope in economies worldwide, menu items not only need to be priced competitively but also within reach of ones' customers' budget.If,for example,I can purchase a hot healthy lunch at your cafe' and it costs me 5 dollars and the competition runs an equivalent menu item for $6.50 it is not likely that I will leave your cafe' in a hurry as my money is worth more to you than to the other cafe'.Also noting which menu items are popular or not can help eliminate certain dishes thus lowering overhead costs and increasing specialization and productivity of those customer-preferred menu items.Peace.
