    do you peel zucchini before you put them in soup?

    I don't the peel is good to eat and gives it great color to.

    You don,t have to but I would, the skin of zucchini can sometimes be bitter.

    but the skin is where the bulk of the nutrition is, and if bitter, spice to balance that.

    I don't peel very many veggies for soup. Throw in chunks or slices of almost anything! Onions do get peeled! Just wash very well!

    I like the color of zucchini, I don't peel it.  That's where all of the vitamins are anyhow.......

    and since it is soup, they will be tender, long cooking time, etc.

    Well okay then. If I ever make zucchini soup, I'll take your word for it and leave the skins on. If I choke on it, well....

    not the whole squash, cut up, but with skins on... And this isn't just squash soup, put them in as any vegetable would go in..
