    Place meat  in a pan, cover with slightly diluted orange juice, bring to the boil and simmer for an hour or two. Remove, put in a roasting dish, spread with marmalade, honey and some of the juice from the saucepan. Cover with foil and cook for about another hour. Remove foil, baste and leave to cook until the skin is golden and as crispy as you like. This is for a relatively large joint - don't be too exact with the timings as you don't want to overcook but as long as you keep basting and keep it moist.

    Never heard of a 'Bacon Joint' until now.
    Do they roll-up on their own?

    Best to soak it overnight to get rid of any salt....there are various ways to cook it....I prefer to put in a roasting dish with a little water, cover with foil and put in the oven.....it needs about 20 mins or so a lb....for the last 20. 30 mins I take the foil off and cook at about 220 to brown the top....serve with new potatoes, broad beans and fresh made parsley sauce, delicious.
