It is caused by the sinus cavities reaction to the cold, that chills the blood going to the front of brain
It is the sinus cavities that heat or cool the air going to your lungs, as needed
One needs to just slow down a bit when eating ice-cream, to dull the effect on the capillaries feeding the front of the brain.
