The temperature changes and sun light decreases in winter slowing or stopping growth in winter months. Nutrients are harder to absorb, which also slows the growth process.
Summer the sunlight is longer for photosynthesis, temperature increase , nutrients are easier to absorb, which increases growth.
Bees pollinate during the warmer months too.
