    are all plural does use s?

    Not all words that are plural will end in "s" some might end in "es" does that help?

    Some use "i" like cactus and cacti......Not all plurals use an "s"...........

    There are scores of words which have no s to their plural form, far too many to list here.

    One moose or many moose.....(not mooses or meese)

    Or mice.

    That would be really nice, but, as you see from the answers, there are many exceptions.  


    mouse to mice.   deer to deer,  moose to moose,  ox to oxen,  cactus to cacti (great example), . Then, to make it more confusing,   house to houses, peer to peers, goose to geese, box to boxes.  
    The only sure rule in English is that there is always an exception.
