    The third one is out because "education" doesn't need to be capitalized.  The other two both sound OK to me, but my preference would be:  Wendy wants to be a teacher. 
    I'd probably select the first answer.  The second one would read better if it said "field of education".....my opinion. 

    All 3 of them are o.k,you don't need a capital letter for education.
