    The cow is a ruminant, an animal with a complex digestive tract composed of 4 stomachs.  One called the rumen, hence a ruminant, is where there is a vat which undergoes biological digestion (fermentation) in which bacteria live to digest the fibers of the plant matter that the cow eats.  They eat grass to in effect, feed these bacteria.  The Horse, also eats grass, but has no rumen, and isn't a ruminant.  It has a cecum, where it has its biological digestion.
