    In baking, what exactly is shortening?

    Is butter considered shortening, or is it a Crisco type product?

    Crisco shortening...butter will not usually work if the recipe calls for shortening.

    It's also known as LARD.  NOT good for heart health, is fat from animals.

    as far as I know, butter, but my nan used to make steak and kidney pie pastry with suet, so it may well be a term used for the binding agent
