If an ambulance is on its way to save someone, and it runs someone over, does it stop to help them?

Drivers in every state are required to stop when involved in an accident and to render what ever assistance they can, under penalty of law.

In that case the ambulance would stop, the EMT's would  render assistance, the driver would notify the Dispatcher of a "Response Failure" and the Dispatcher would assign another Crew to the original call.

I can only imagine it would,or at least call for some back-up.

Yes they would thats there training help to save lives.
