I am an artist and it's  a pretty good gig but If I didn't do this I would choose Mad Scientist and find a way to put and end to everything that is non-recyclable on this planet (especially Egypt).  Discover natural solutions for pest control in the agricultural industry and then as a hobby solidify World Peace upon this glorious planet.

I would have chosen to be Emperor of the World, but some American chap with an odd name has the job and frankly he has a far more practiced way of looking down his nose at people than I do. He has a fine sneer too and a way with other people's money that makes me look careful.
