I often cut a "pocket" through the side and stuff it with lightly fried bacon,onion breadcrumbs and parsley, then seal on all sides, transfer to roasting pan and cook slowly in the oven. The other way I like is to inject the meat with port, put slivers of garlic into little slits cut all over and then roast, the port leaks out but gives the meat a very rich flavour and the juices make fantastic gravy
