  it depends wether you want Mayo in it I aways chop up the cooked eggs and then a table spoon of mayo salt and gound black pepper and put on two slices of brown bread and enjoy

Hard-boiled eggs, peeled and mashed , mixed with a bit of mustard and mayonnaise (don't use too much mustard, and don't sog up the mixture with too much mayo).  Salt and pepper to taste.       It is much like deviled eggs, only includes the "white".  Sometimes I use a bit of Ranch dressing in place of the mayo.  You can add chopped onions or olives, bacon bits.  Doctor it up, if you want, but the basic is egg, mustard, mayo, salt & pepper.  
White bread is the bomb for egg salad.  Add a leaf of lettuce on the bread.  Yum.

One egg chopped up, One dish of salad chopped up, two slices of bread not chopped up, place the first two items inside the third, there's your egg and salad sandwich. Bon Appetite.
