      Duram wheat, which is milled into fine semolina, its a great alternate to rice and also really good  with herbs as a chicken stuffing.

          There is a restaurant that serves it with a vinaigrette dressing on it and it has cucumbers, celery, etc AND raisins. I can eat my weight in couscous....
