        You can add chicken broth to pan as you roast it.  Also if cooked in a bag, that helps retain moisture.  And you can baste it often while it roasts.

          Start cooking it upside down, that will keep the breast juicey. Cover it with fat like in salt pork for first part of cooking, remove when you flip the bird and let the bird brown. Baste all the while,,,,,
