110g/4oz Plain sifted flour
Pinch of Salt
2 eggs
200 ml/7 fl oz milk mixed with 75ml/3fl oz water
50g/2oz butter
TO SERVE - Caster Sugar - Lemon Juice
METHOD- Sift the flour into a large bowl getting in as much air as possible
Make a well in the flour and break eggs into it.
Begin Whisking in the eggs, gradually taking flour from edges of the flour well.
Next Gradually add milk/water until the consistency of the batter is that of thin cream.
Get the frying pan hot, melt the butter (becareful not to burn it). About 2 tablespoons of batter mix will make one pancake. They take only a few seconds to cook each side.
Serve with lemon and sugar and good luck!
