The USDA has meat grades, for quality purposes. These have to do with the amount of lean and fat ratio. "Choice" is the top grade today, at one time it was called Prime, however, the consumer demands have caused need to revamp the system. I do not think that you could buy a "prime" steak today, as the producers do not grow cattle that way any more. It is way more expensive to grow meat with fat, than meat with less, or no fat. (and the leaner meat is better for us, so the Gov't. says!).
