Depends upon what you are cutting it for...for starts lay them on their sides, cut off the top portion, then remove the seeds and the membranes....now, for stuffing purposes just rinse at this point and lie face down after salting...then stuff with whatever you wish to stuff it with...if for sauteeing do above steps and slice into strips, saute til tender...enjoy!
