taosted english muffin topped with a poached egg and a slice of canadian bacon. You can't have eggs benendict without holindaise sause. It is made by quckly wisking an egg yolk, dried tarragon, and lemon juice over a double broiler. (a pan with boiling water with anouther pan over it so you don't scramble the egg) Then put the sauce all over the top wala...!1
