what is done if it is discovered that a female cat that has been trapped for spay recently had a litter? Does your organization spay the cat and release her? Or release her immediately?

Catspan would likely trap her kittens as well or at least capture them if they're teensy peensy... they would set them back together once the kittens are weaned and fixed etcetera... unless they tame the kittens and find them homes. Adult ferals are nearly impossible to tame so are usually treated, tested for diseases, spayed or neutered and then released to an established, monitored colony.
