Harvest sweet corn 18-24 days after the silk first appears on at least half of the crop. The silk will begin to dry and turn brown when the corn is at its peak flavor. You can also peel back the husk on an ear and poke a kernel with your fingernail. If the juice in the kernel is milky, the corn is mature.
