To my knowledge the chicory root is cleaned, then roasted at a low temperature or on a stone nearest a campfire... then once it is roasted to nearly charred, cool it then grate it or chop it finely scraping it really, with a sharp knife and then use as you would coffee but adjust to your taste... it is a lovely substitute as are roasted dandelion roots....chicory coffee increases bile from the liver so avoid this beverage if you suffer from leaky gut syndrome or if you are missing a gall bladder!
