    what is the term for picking potatoes by hand?

    Hand pickers.

    Normaly they are lifted by cobine( harvesters ) that might not be the correct name for them but it is a machine like that or a Tractor with plower on it. and they seem to do all the work  when I was akid we use to help the farmer pick the potatoes and it was back breaking Hence where the name came from the tractor re-rooted the potatoes and then we picked up the spuds and put them in a sack

    You need to dig the potatoes out, so hand-digger is the term.
