IN gmail, archived mail is just moved from your inbox folder into an archive folder. It's still there, you can still search for it and move it to folders.
In email clients archived emails will be in the backup folders (saved folders) under all the sent, outbox, inbox, etc folders. They'll probably be titled with the date you archived them.
