how much tree root can I remove and not harm the tree

I'm putting in a sidewalk and there are several large root pertruding through the soil.  I need to shave or grind these off to make the sidewalk level.  The tree is a large maple (maybe a Norway) - probably 50 years old.

You'll be fine removing the roots you need to in order to make the sidewalk level.

Most trees have a significant amount of roots, so removing some will not alter the trees health.

Use your own judgment. The size of the tree is also a factor.

pends what kin of tree and thee size

Go for it.You won't hurt the tree.
