I definitely wouldn't risk not doing it. My idea of an ideal night wouldn't be in spending it in an emergency room with salmonela poisoning.

You must have to grill it for hours! I find the outside will burn before the insides cook especially if BBQing even at a lower heat.

No way! I don't grill on open flames, I smoke grill my chicken, it takes about 60-90 mins. to cook. Skinless chicken takes less time to cook. My bbq chicken comes out perfect every time.

Smoking is so much more different than grilling. I have a smoker too. I really should pull it out someday and use it, lol Then again, I could just come to your house.....

You are welcome to come anytime! Here's what I do to grill chicken. Light the coals and let them burn until they turn white. Coals are nice and hot and ready for grilling, no flame. The last ten minutes but the bbq sauce on chicken, then, let it cook for another 10 mins. Presto, bbq grilled chicken!

Yes! Cook first and then grill. Think of the grill as just seasoning the cooked chicken to taste as that's more the reason for grilling chicken, just to add flavor not so much to cook it.
