When cooking with ginger, only cut off the portion that you will use. Keep the rest in the refrigerator. Don't wash your ginger before storing it in the vegetable crisper. Washing ginger promotes mold growth.
Fresh ginger should be stored in a paper bag in the vegetable crisper of the refrigerator, where it will keep for weeks.

Hi Gardener as Iampamela has said dont wash it but you can freeze ginger and it comes out really good what I normally do is cut out what you would normally use and cut in peices and when you need some ginger take it out and let it thaw or if you are grateing the ginger leave it frozen and it really is easy to use that way
